Japanese Style Chicken Drumsticks


Im always looking for some new chicken recipe and i came across this recipe. It was soo simple that I just had to try it. 

Japanese Style Chicken Drumsticks


Ingredients:

8 chicken drumsticks , skin on (the skin is important for flavour)
1 cup water
1/3 cup vinegar
1⁄3; cup soy sauce
2 tablespoons sugar
1 garlic clove , peeled and bruised
2 small green chillies , slit open, seeds removed (
or 3 or 4 dried red chillies)


How to:

 Place all the ingredients except for the dried chillies in a saucepan over a high heat. 
Bring to the boil, then reduce to a simmer for about 20 minutes. 
And increase the heat, turning the drumsticks frequently in the liquid
Cook until the liquid has reduced to a sticky sauce. 
Arrange the chicken on a serving platter, remove the garlic clove and chili from the liquid, and spoon the sauce over.

My easy creamy pasta recipe

This is an easy creamy pasta which I usually make with chicken. You can also add mushrooms or even substitute chicken with sausage or cubed luncheon meat.

Easy Creamy Pasta



Ingredients:
3 cups cooked pasta (add salt n a lil olive oil to the boiling water when cooking)
1 tin Nestle' cream
1 cup chicken (boneless chicken sliced into thin strips and stir fried in a lil oil)
2 cloves garlic chopped fine
1 1/2 cup chicken stock
olive oil
salt n pepper to taste

How to:


  1. Add about 2 tbsp olive oil to pan and add garlic.
  2. Fry until slightly brown and add chicken (and mushrooms if u are adding).
  3. Add chicken stock.
  4. Taste and season with salt and pepper.
  5. Add the cream and stir well. The sauce is ready!
  6. Top pasta with cream sauce and side it with garlic bread or a salad :)

Peppery tuna and olive salad

Its a salad you can eat on it's own as well as with any main dish. Or simple eat with toasted bread. Zesty and tunalicious.



Peppery tuna and olive salad

Ingredients:

Lettuce (Try to get iceberg lettuce as it is very crunchy, nutty and doesn't wilt so soon).
1 lime's juice
1/2 can tuna
roughly ground pepper
1 tspn olive oil
1 red bell pepper sliced thin and long
8-10 pitted olives

How to:

  1. Mix lime juice, pepper, olive oil and tuna together. Add salt if needed. 
  2. Tear lettuce with hand into pieces
  3. Start arranging layers. First lettuce, then arrange few pepper slices and some of the tuna mixture.
  4. Toss a few olives and repeat layers until you use up all of it.
Tip: You can use a pepper and lime tuna can instead of making the tuna mixture (its a new type of tuna can by Fasmeeru I think. Its in a small can)



Chicken pepperoncini - City style

I tasted this at City Garden and found that it was such a simple and tasty pasta that you can easily replicate at home. It was an aglio olio (just olive oil, garlic and dried chillies) recipe combined with sliced chicken pieces.
Try it because it's a recipe that you could never mess up.



Chicken Pepperoncini - City style

Ingredients:

1 Pack spaghetti
Olive oil
Chicken cut into small pieces pan fried till brown
5 - 6 Dried chillies halved
4 cloves garlic chopped finely
Salt and pepper to taste

How to:


  1. Cook pasta as per instructions on box (add salt and a lil olive oil to the water and bring water to boil before putting in the pasta)
  2. Heat about 2 tablespoon oil in pan. Add garlic.
  3. When garlic starts to brown low heat and add the chillies and chicken.
  4. Season with salt and pepper.
  5. Add in the spaghetti and toss well together.
  6. And its READY!   :) now wasn't that easy or what?
Ps. you can sprinkle cheese for extra yumminess

Creamy chicken with mushrooms

This is a recipe i tried this Eid and it turned out to be so rich and delicious. It goes very well with rice as well as pasta. Just toss a light salad and voila! Its a feast that you can't get enough of.



Ingredients

Chicken breast/ Boneless chicken
1 can Nestle' cream
1 can mushrooms
1 1/2 cup chicken stock
2 garlic chopped fine
Olive oil
Handful of chopped leeks
Salt and pepper

How to:

Cut chicken into medium sized cubes.
Heat oil in pan and fry chicken cubes until browned nicely.
Remove from pan and keep aside.
Add garlic and mushrooms to pan and cook till slightly browned.
Add chickem stock and cream slowly.
When sauce thickens add chicken, season with salt and pepper
Remove from heat and serve with leeks sprinkled on top.

Easy peasy right? ;)

Lasagna, Mamma Mia! ;)

This dish takes quite some time and effort but is definitely worth the effort. I follow the recipe I found on the back of San Remo's lasagna box although you can change it as you please. For example I sometimes add fried egg plant slices in between layers which is very yummy too. You can switch beef with chicken, tuna and even vegetables if you want to go vegetarian.



Easy meat lasagna


Ingredients:

Lasagna sheets
2 tbsp oil
1 onion, finely chopped
1 carrot, finely chopped
1 clove garlic, crushed
500g beef mince
5 tbsp tomato paste
2 x 400g canned tomatoes
2 cups chicken stock (u can mix chicken cube in water)
Salt and pepper to taste

2 tbsp butter
2 tbsp plain flour
2 cups milk
125g mozzarella or cheddar cheese

How to Make It?
Meat Sauce
Heat oil in a saucepan.
Add onion, carrot, and garlic, cook until soft.Add beef mince, cook until brown. Stir in tomato paste, canned tomatoes, and chicken stock.Season with salt, pepperCover and cook gently 20 minutes.
Remove from the heat, stir in milk.
Return to heat, stir until thick and smooth.
Season with salt, pepper, and add mozzarella or cheddar cheese, stirring over low heat until cheese melts.
Pour ½ cup of the meat sauce into a lightly greased baking dish.
Alternate layers of lasagna, meat, and cheese sauces, ending with cheese sauce layer (allow for 4 layers).
Sprinkle with grated parmesan cheese, bake in oven for 35-40 minutes. Or until cooked through (test if cooked by pricking with a fork).
Let stand 5 minutes before serving.


Cheese Sauce
Melt butter in a separate saucepan, stir in flour and cook for 2 minutes over gentle heat.
Assembly
Preheat oven to 180°C.
SERVES 4
Hint : For perfect lasagna, make sure that lasagna sheets are completely covered with the meat sauce. Important to retain a high level of moisture.

My Mom-in-law's roasted chilli chicken recipe

Learned this from my mom-in-law who cooks everything so effortlessly and tastes absolutely divine. Perfect simple dish which impresses almost everyone with its yumminess.



 MIL's Roasted Chilli Chicken

Ingredients:
1 Pack of chicken drumsticks
3 tablespoons of lonumirus havadh (powdered chilli curry spice)
3 tablespoon chilli sauce
oil for shallow frying
1 medium sized onion sliced finely
4 cloves garlic crushed
about 10 curry leaves
salt to taste

How to:


  • Coat drumsticks with lonumirus havadh and salt to taste.
  • Shallow fry the chicken until cooked and nicely red and crisp on the outside. Keep aside.
  • Fry onion and garlic in a wok/pot and add chicken.
  • Add chilli sauce and combine well.


Ready to serve! If u want can garnish with fresh coriander leaves for an indian touch. :)
